Keto creamy Tuscan shrimp is an easy, delicious dish made with shrimp, garlic, tomatoes, spinach, heavy cream, basil and parmesan cheese. Less than 10 minutes from start to finish! You are going to love it!


Ingredients

· 1 LB of Shrimp, halved, deveined with tails removed

· 2 TBS Olive Oil

· 2 TBS Butter

· Salt & Pepper to taste

· 3-4 Garlic Cloves minced

· 1 Cup halved Cherry or Grape Tomatoes

· 3-4 Cups of Baby Spinach

· ¾ Cup Heavy Whipping Cream

· ¼ Cup Parmesan Cheese freshly grated

· 2 TBS Basil thinly sliced


Instructions


· Heat Oil and Butter in a large saucepan over medium high heat until very hot

· Add Shrimp to pan, add a generous amount of salt and pepper, sauté for 1-2 minutes until cooked

· Set Shrimp aside and add garlic, tomatoes and spinach to pan and sauté for 1-2 minutes until fragrant

· Reduce heat to medium and stir in Heavy Whipping Cream, Parmesan Cheese and Basil for 2-3 minutes

· Add Shrimp back to pan and stir to combine
