llll Pressure Cooker Keto Tuscan Soupllll
There is never a bad time for soup, but especially when it is a little bit chilly out and you are craving something filling and delicious. This low carb pressure cooker recipe will have you warmed from the inside in no time!
Ingredients
· 1 LB Hot Italian Saugage (without casing)
· 1 Large White Onion Chopped
· 3 Garlic Cloves Minced
· 1 TSP Dried Oregano
· ½ Cup Sundried Tomatoes Drained and Chopped
· 6 Cups of low-sodium Chicken Broth
· 1 Bunch of Kale (leaves stripped and chopped)
· ¾ Cup Heavy Whipping Cream
· Salt and Pepper to taste
Toppings
· ¼ Cup Finely Grated Parmesan Cheese
· Fresh Chopped Parsley
Instructions
1. Brown Sausage in skillet over med-high heat and drain excess fat (4-5 minutes)
2. Add chopped onion, minced garlic, oregano, salt & pepper (cook additional 2-3 minutes)
3. Place mixture in pressure cooker & add chicken broth & sundried tomatoes cook and stir
4. Cook on High for 5 minutes
5. Release pressure and add in kale and heavy whipping cream stirring until kale is slightly wilted
6. Top with chopped parsley and freshly grated parmesan cheese
